Award-Winning Goats Milk Lebny with Herby Zaatar
Arabian food specialty company Terra Rossa celebrates scooping yet another Great Taste Award - its 74th in 18 years - for its exquisite Lebny Strained Yoghurt Balls & Herby Zaatar Thyme Mix. Organised by the Guild of Fine Food and judged by a panel of over 500 food experts, this is what the judges said 'The combination of the sharpness of the yoghurt balls with the aromatic blend of the zaatar is both a delight and a surprise. The tanginess of the goats mild yoghurt delivers great length of flavour and this is balanced very well with the zaatar'.
Lebny is a delicious, cheese-like creamy yoghurt with a gorgeous tang. Made from strained goats milk yoghurt, Lebny is formed into aesthetically pleasing and convenient balls, preserved in olive oil making them perfect for gourmet meals and every day recipes too.
Lebny is traditionally eaten at breakfast or as part of a mezze accompanied with fragrant Zaatar Thyme Mix (thyme, zesty sumac and nutty sesame seeds). For added convenience both products come ready to be served individually or enjoyed by combining and rolling them together. However, this is just one of many ways to enjoy Lebny. It is wonderful in pastries or stuffed into peppers; adds a mouth-watering tang to salads and as it doesn't curdle at high temperatures it can also be used to thicken and flavour soups and stews. Highly versatile, it can also provide the perfect desert with honey or date molasses and served with dried fruits such as figs with a sprinkle of pistachios.

And this is what the Judges said:
- The combination of the sharpness of the yoghurt balls with the aromatic blend of the za'atar is both a delight and a surprise. The tanginess of the goats mild yoghurt delivers great length of flavour and this is balanced very well with the za'atar.
- The unusually high and enduring level of acidity in this labneh divided the table and accounted for our star rating. The creaminess on first bite was much appreciated though, as was the superb and very approachable texture.
- A very attractive looking product. The yoghurt balls were very tangy and overtook any taste of za'atar. On its own, the za'atar was mild in taste, which could be why the yoghurt tang overpowered here. The product has great promise if the flavour profile can be balanced.
